We all know how hard it can be to manage the afternoon whirlwind of homework, bath time and dinner, so make your life a little easier with a quick and delicious slow cooker soup! Pumpkin is full of antioxidants that will do wonders for your complexion and the vitamin C will give your immune system a boost. This tasty recipe is perfect for the chilly winter months and will warm you up in no time. Prep the soup either the night before or first thing in the morning and give yourself a little extra time to tackle the evening rush:


Tasty Pumpkin Soup

PREP TIME: 30 minutes – COOK TIME: 4.5 hours


  1.  3/4 x medium butternut pumpkin 
  2.  2 x medium potatoes [use sweet potato instead for a healthier option]
  3.  1 x onion
  4.  2 x teaspoons mild curry powder
  5.  2 1/2 x cups vegetable liquid stock
  6.  1 x cup full cream
  7.  Salt and pepper to taste
  8.  OPTIONAL – Add diced chillis for a spicier taste



  1. Peel the pumpkin and potato and cut into small to medium sized pieces [Note: remove pumpkin seeds]
  2. Dice the onion
  3. Place pumpkin, potato, onion, curry powder, stock and salt and pepper into a large slow cooker
  4. Place slow cooker on high and let it cook through the day [Note: approx 4-5 hours or until vegetables are tender]
  5. Turn off heat and leave to cool. Use a stick blender or food processor to blend the soup until it is smooth
  6. Add cream and chilli powder, re-heat the soup and slice up a loaf of fresh bread to create an easy and delicious meal!


For a vegan option simply replace the full cream with coconut cream and you’re all set!
